Aloo Gobi Masala

 Aloo Gobi Masala is basically a gravy recipe with diced potatoes and cauliflower prepared with onion, tomato, and cashew curry paste. It is also spiced with whole spices like cinnamon, bay leaf and spice powders like coriander, chili powder, and turmeric powder.


INGREDIENTS

FOR ONION-TOMATO PASTE:

  • 2 tsp oil
  • 1 medium-sized onionthinly sliced
  • 1-inch ginger 
  • 3 cloves garlic
  • 2 medium-sized tomatofinely chopped
  • 8 whole cashews

OTHER INGREDIENTS:

  • 2 tsp oil
  • 1 tsp jeera seeds
  • 1 bay leaf 
  • ½ tsp turmeric
  • 1-inch cinnamon stick
  • 1 tsp Kashmiri chili powder
  • salt to taste
  • 1 tsp coriander powder
  • 2 medium-sized potatocubed
  • 1 cup of water
  • 2 cups cauliflower florets
  • 1 tsp Kasuri methi / dry fenugreek leavescrushed
  • ¼ tsp garam masala
  • 2 tbsp coriander leavesfinely chopped

INSTRUCTIONS

ONION-TOMATO PASTE RECIPE:

  • firstly, in a large kadai heat oil.
  • further saute onions, garlic, and ginger till they turn translucent.
  • also, add tomatoes and saute well.
  • additionally, add cashews and saute.
  • cool completely and blend to smooth paste, adding water as required.

ALOO-GOBI CURRY RECIPE:

  • firstly, add oil and saute jeera, bay leaf and cinnamon stick till they turn aromatic.
  • further, add chili powder and turmeric and saute for 20 seconds on low flame.
  • add prepared onion-tomato paste and saute for 5 minutes.
  • also, add coriander powder and salt.
  • furthermore, add cubed potatoes and water. mix well.
  • cover and cook for 10 minutes.
  • now add gobi florets and simmer for 15 minutes.
  • also add Kasuri methi, garam masala, and coriander leaves and mix well.
  • finally, serve aloo gobi curry with roti or rice.
